Students must present a written product for grading that meets both ULWR standards and the requirements of the course assignment.

Description

Making mindful food choices is perhaps the single most impactful thing we can do to minimize our personal carbon footprint, but for many, the system is rigged and choice is a fallacy. This course will explore the federal laws, regulations and programs impacting our food system, and accordingly, our food choices. Additionally, the course will discuss the critical intersection between food policy and climate change. We will deconstruct the recent history and the present state of climate policy progress in the US Congress, and we will debate the efficacy of available levers for change-making. Specifically, the course will examine: The local and national food chain responses to COVID-19; USDA and the Farm Bill, the WIC, SNAP and School Lunch programs; food labeling, production, distribution and retailing; Genetically Modified Organisms (GMOs) and Big Ag; trade policy, as it relates to the modern food movement; The Clean Air and Water Acts as they pertain to agriculture; and the current state of play with regard to climate legislation.
